You will need:
Nut paste:
1 cup pecans
3/4 cup cashews
1 cup diced red or yellow bell pepper
2-3 green onions
1/4 tsp garlic powder
1/4 tsp chili flakes
1/4 tsp herbamere salt
1/2 tsp himalyan salt
1/4 tsp turmeric powder
Filling:
1 carrot
1/2 cucumber
1 red or yellow bell pepper
1 mango
1 avocado
Optional: Smoked salmon
Other:
1 package of Nori sheets
To make:
Start by preparing all vegetables. Julienne the carrot, cucumber, bell pepper, mango and avocado. Set aside.
For the nut paste, place pecans and cashews into food processor and blend until crumbly ~ 30 seconds, pulsing.
Add all remaining ingredients and pulse until well combined. Set aside.
Now its time to build your rolls. Starting with the nori, lay sheet so the lines of the nori are perpendicular to you.
Spread 1-2 tablespoons of the nut paste within the closest 1/2 of the nori. Spread evenly, towards the edges.
Lay veggies lengthwise over your paste.
Start with the edge closest to you, and begin to roll tightly as you move along. Once you get to the end, seal edges with water (run your wet finger along edge and roll to seal)
Cut with a sharp knife into 4-6 bite size pieces.
