Chewy Granola Bars

You will need:


Dry ingredients:

  • 1/2 cup pecans

  • 1/2 cup macadamia nuts

  • 1/2 cup pumpkin seeds

  • 2/3 cup shredded unsweetened coconut

  • 1 tsp cinnamon

Wet ingredients:

  • 1 tsp vanilla

  • 2 tbsp honey

  • 2 tbsp maple syrup

  • 2 tbsp coconut oil

  • 2 tbsp peanut butter

To make:

  1. Begin by preheating your oven to 300F. Line a 9 inch baking pan in parchment paper and set aside.

  2. Crush or blend pecans & macadamia nuts into smaller pieces. Be careful to not over blend. You want it chunky.

  3. In a medium bowl, add all dry ingredients and stir to combine.

  4. In a small bowl, combine all wet ingredients. Using a fork, wisk lightly until all ingredients are combined and smooth.

  5. Add wet ingredients into dry and fold to combine.

  6. Pour into lined baking pan and bake in oven for 15-20 minutes or until golden brown.

  7. Once removed from oven, set aside for 1 hour before cutting into slices.

  8. Store in an airtight container in fridge or freezer.
