Chewy Granola Bars
You will need:
1/2 cup pecans
1/2 cup macadamia nuts
1/2 cup pumpkin seeds
2/3 cup shredded unsweetened coconut
1 tsp cinnamon
1 tsp vanilla
2 tbsp honey
2 tbsp maple syrup
2 tbsp coconut oil
2 tbsp peanut butter
Begin by preheating your oven to 300F. Line a 9 inch baking pan in parchment paper and set aside.
Crush or blend pecans & macadamia nuts into smaller pieces. Be careful to not over blend. You want it chunky.
In a medium bowl, add all dry ingredients and stir to combine.
In a small bowl, combine all wet ingredients. Using a fork, wisk lightly until all ingredients are combined and smooth.
Add wet ingredients into dry and fold to combine.
Pour into lined baking pan and bake in oven for 15-20 minutes or until golden brown.
Once removed from oven, set aside for 1 hour before cutting into slices.
Store in an airtight container in fridge or freezer.
