You will need:
3 tbsp chia seeds
1/4 cup soaked cashews
1/2 cup water
1/4 coconut milk
2 tbsp nut milk
1/2 tsp vanilla
1 date
Dash of salt
*water for soaking cashews
* hot water for soaking date
To make:
If you do not have a high speed blender, begin by soaking your cashews in water for 10-20 minutes & the date in hot water for 5 minutes.
In a bowl, combine water, coconut milk & chia seeds. Set aside until mixture forms a gel like consistency ~ 10 minutes.
In a blender, combine chia gel, vanilla, date, nut milk & salt. Puree until smooth.
Pour mixture into bowl, and top with any toppings you want! Pictured is butter sauteed apples & shredded coconut.
Want to make the butter sautéed apples?
Dice one apple into small, bite size pieces. Heat a cast iron, and add 1-2 tbsp of butter. Add apples and stir until well coated. In a separate bowl, combine 1 tbsp erythritol & 1 tsp cinnamon. Stir to combine and sprinkle half the mixture on the apples as they cook. Continuing stirring for 5-8 minutes, adding more cinnamon sugar if needed. Once apples are done, they will be soft and caramelized.
