You will need:
1/2 cup cashews
1 cup shredded coconut
1 whole avocado
1/4 cup cacao powder
2 tbsp almond butter
2 dates
2 tbsp erythritol (you can add more if you like them sweeter)
4 tbsp collagen
3 tbsp coconut flour
1/2 tsp vanilla
Extra shredded coconut & cacao powder to roll balls in
To make:
In a food processor, pulse the cashews and coconut until fine.
Add remaining ingredients and blend until well combined.
In two small bowls, pour some coconut and cacao powder to roll the balls in.
Scooping out a walnut size amount, roll the balls in your hand, then into your coating of choice.
Place finished balls on parchment paper, and place into the fridge.
After the balls are firm (~1 hour), store in an airtight container in fridge.
Notes:
If the dough is too sticky, add more coconut flour until it’s easy to roll.
**Due to the avocado, the balls should be consumed within 3-4 days.
