You will need:
1 & 1/3 cup almond flour
6 tbsp coconut flour
1/2 cup butter at room temperature
1 egg
1/4 cup maple syrup
1/2 tsp vanilla
1/4 tsp baking soda
Pinch of salt
To make:
Combine dry ingredients in a bowl and set aside.
In a small bowl and using an electric hand mixer, combine butter and maple syrup until evenly mixed.
Add egg and vanilla and mix for 1 minute (it might look broken from the butter but dont worry)
Add wet ingredients into dry and stir to combine.
Roll dough into a ball and wrap in saran/parchment paper. Place in fridge for minimum 1 hour up to overnight.
Once chilled, remove the dough from the fridge and using coconut flour, dust the surface you will be working on.
Preheat the oven to 350F and prepare a baking sheet with parchment paper.
Roll dough into desired thickness and using cookie cutters of choice, cut cookies into desired shapes.
Place cookies on prepared sheet and bake for 5-6 minutes.
Remove from oven and let cool before decorating.
Icing Sugar
You will need:
1.5 cup monk fruit sugar (I used Lakanto)
6 tsp arrowroot starch
1/2 cup butter at room temperature
Optional: Organika Mylk products to dye colour of icing (blue, pink & yellow)
To make:
In order to make the icing sugar, you must grind the granular monk fruit sugar. Using a coffee grinder works best.
Fill coffee grinder with sugar and grind until powder is formed ~30 seconds
Combine sugar powder, arrowroot starch and butter into a bowl.
With a hand mixer, whip the ingredients to form a thick icing.
If you plan to have a variety of icing colours, divide the icing evenly into small bowls. Add 1 tbsp of Organika's Mylk products and stir to combine.
Decorate as desired.
