Roasted Cinnamon & Cardamom Pear


You will need:

  • 1 pear, cut in half

  • 1 tbsp coconut oil

  • 1 tsp monk fruit sugar

  • 1/2 tsp cinnamon

  • Large pinch of cardamom

Coconut whip:

  • 1 can of coconut milk, refridgerated overnight

  • 1/2 tsp vanilla

  1. Preheat the oven to 375F

  2. Cut pears in half, and remove centre with spoon or melon baller

  3. In your pan, add coconut oil and place pears cut side down.

  4. In a small bowl, combine cinnamon, cardamom and monk fruit sugar. Mix well.

  5. Sprinkle half of the cinnamon mix on top of pears and bake in oven for 15 minutes.

  6. After 15 minutes, remove the pears and baste with coconut oil from the pan and sprinkle with remaining topping.

  7. Bake for additional 10 minutes.

  8. Once tender with a fork, place on plate with coconut whip.

  9. Enjoy!

To make coconut whip:

  1. Place coconut milk in the fridge overnight to harden.

  2. Open canned milk and remove top layer of hardened coconut cream solids.

  3. Beat coconut cream solids with electric mixer until begins to form soft peaks ~ 5 - 6 minutes. Add vanilla and sweetener of choice. Beat additional 1-2 minutes.
