Cloud cookies

You will need:

  • 3 egg whites

  • 1/2 tsp vanilla

  • 1/8 tsp cream of tartar

  • 4 tbsp date sugar*

  • 1 tbsp cacao powder

  • 3oz dark chocolate

  • Optional: top with roasted hazelnuts


To make:

  1. Preheat your oven to 325F and prepare a baking sheet with parchment paper. Set aside.

  2. Using a double boiler, over medium heat, melt down your chocolate. Set aside to cool.

  3. In a large mixing bowl, add your egg whites, cream of tartar & vanilla. Using a hand mixer, beat on high until soft peaks form.

  4. Add sugar. Continue beating until peaks are stiff.

  5. Fold in melted chocolate and cacao powder.

  6. Place rounded tablespoon size cookies on your prepared sheet (or using a piping bag). The cookies will expand slightly so leave enough space between cookies.

  7. Top with roasted hazelnuts (if using)

  8. Bake for 5-10 minutes depending on the thickness and size of your cookies. You will know they are finished when the edges turn slightly darker. Be careful not to burn.


Notes:

* I did not try this recipe with any other type of sugar so I can’t gaurantee the same results if you choose an alternate sugar.
