You will need:
1 bunch of green onion
3/4 cup avocado oil
Salt to taste
Over high heat, boil 3 cups of water.
In a medium bowl, add cold water and a few ice cubes. Set aside.
While you wait for the water to boil, prepare your scallions. Wash well and cut where the green meets the white of the scallions (about halfway down). You will not need the white or onion part of the scallion so place back in fridge and save for another dish.
Using only the green leafy part of the scallion, drop into boiling water for 30 seconds. Remove from water and drop into ice bath. After 1 minute, remove and lay on a towel to pat dry (this will help keep the bright green colour of the oil).
Add to a high powered blender with avocado oil and blend for 2 minutes on high.
If you like your oil chunky, you can leave it as is. Otherwise, using a cheesecloth, strain & squeeze the oil.
Add salt to taste and store in air tight container in fridge.
